has been quite sometime since I updated you all with my Eggless baking, but
I have a really good excuse… Chocolate Cake. Not just any chocolate cake but, Dairy-free, Eggless Chocolate Cake!
This Luxury Chocolate Loaf Cake is Eggless, nut free and dairy free and suitable for Vegans and Vegetarians.
I have been baking Eggless cakes for some time whilst developing a cake mix which is not only Dairy-free but Egg-free too.
Friends and family have been feasting for months on all the cakes I had been baking and . at the same time, they found t hard to believe that the cakes did not contain eggs, dairy or nuts. More importantly, the cakes was enjoyed by everyone, including people and children allergic to dairy, eggs and nuts. I could see why the cakes were very popular as it is really difficult these days to find a Dairy-free or Egg-less cake mix in the Supermarkets. I should know, as I have been searching for a suitable brand of ready made egg less cake mix for years for my daughter who is allergic to eggs and dairy products.
Anyway, I decided dedicate my time and energy into developing a ready made Dairy-free, Eggless cake mix so that anyone can bake their own delicious Dairy- free, Eggless cakes at home, just like the one I baked.
Good news for Vegan and Vegetarians! The cake mix is also perfect to use as a Vegan Cake Mix.
Well, I do hope you like the results!

In our home, we celebrated the Queen’s Diamond Jubilee by baking the Queen of all Victoria Sandwich cakes - eggless and nutfree of course!
I understand that it took three years to organise the Queen’s Diamond Jubilee celebration. It took me three days of meticulous planning to create the ultimate Diamond Jubliee Victoria Sandwich. Seriously, I even dreamt about the final presentation of this cake last night!
The sponge reminded me of a gateau, with layers of my homemade vanilla icing with the addition of reduced strawberry conserve purchased at my local supermarket. A topping of fresh strawberries with a dusting of icing sugar for a delicate touch; and a sprinkle of patriotic sprinkles - red, white, and blue - to mark the historic occasion.
Enough talk, here is the eggless, nutless, celebratory Diamond Jubilee cake.
A Tribute to Apple Crumble Lovers Everywhere
I like cake, but I absolutely love Apple Crumble, so much, that I could eat it in my sleep! So, imagine that you have a cake - not just any cake - but my eggless, buttermilk cake…. Hold that thought. Then, imagine someone pours an Apple Crumble all over the top of that cake…
Yes, I know, I am holding my breath too!
Well, I baked the ultimate Apple Crumble Cake and the result was absolutely delicious! One of my BEST cakes I have eaten; even though I say so myself!
This cake is a tribute to all my followers who love Apple Crumble. Apple Crumble lovers, this one is for you!
I have been so busy experimenting that I have not uploaded anything for a while - BUT - as you can see I have good excuses for the delay!
This time around I have been working with mixed fruits in my recipes. A bag of mixed, dried fruit is so easy to find the baking aisle at the supermarket. Or, you can just use your favourite dried fruit - cranberries, apricots, dates, goji berries …
I went one further, because I have a sweet tooth, and added spoonfuls of Bramley Apple Sauce into my cake mix and I must say that you MUST try this at home!

Naturally, you know that I do not use any eggs, nuts, or dairy products in any of my baking. It can be done.

These are my favourite homemade VEGAN biscuits made with flour, sugar, ‘Pure’ - vegan butter, and lemons.
These biscuits simply melt away in your mouth, and are an upgraded version of my signature biscuits which you can find in my previous post.
I am sure you all must be wondering what I have been up to recently!
Well, here are a few bakes that I have made, which I must say, are quite the variety!
Naturally, they are all allergy friendly as they all do not contain eggs or nuts.
Millionaire’s Brownies: An upscale version of brownies with a delicious marble layer of milk and white chocolate.
Peach and Blueberry Ice-cream Tart: An easy no-bake tart using Vanilla ‘Swedish Glace’ ice-cream and a crushed ‘Lotus’ biscuit base. Fresh Blueberries and Peaches finish off this lovely dessert.
‘Clever Pizza’: Not your typical pizza, but just as nice! I used Warburtons’ Milk Bread - that have round slices and are surprisingly great for using as the bases of mini pizzas. Add your favourite toppings and grill until the cheese melts. Tasty for kids, teens, and adults.
I really enjoy baking. I can remember coming home from school to the smell of freshly baked lemon butterfly cupcakes -my Mum’s signature teatime bake. I ate far too many of them but they were so scrumptious.
Recently, I found myself creating and developing recipes for cakes, muffins and biscuits that are egg-free and nut-free, as my daughter suffers from food allergies.
Food allergy sufferers do have a sweet tooth and will always want to indulge in sweet, delicious treats.
Now, I have created a signature recipes which are truly egg-free, nut-free and fuss free. Like my “Twice as Nice” signature Lemon and Chocolate Muffins.
